Selling meat off farm that is slaughtered by a registered abattoir

Hi, I read the answer to a post about the process of how to go about legally slaughtering and selling meat off farm, and that it was a costly and lengthy process. How much would that change if the body is slaughtered by a registered abattoir? Then we would cut it up and package it here to be frozen and sold frozen from here...?

Can anybody please enlighten me? I want to sell beef direct to customers. We would be using a Primesafe abattoirs to process, and a Primesafe butcher to package, cryovac, label & freeze as customer requests. Do I have to have a refrigerated van or can the frozen meat be transported in giant eskies? Can I store in dedicated meat storage freezers in a dedicated meatroom, customer to collect, or do I have to deliver direct from butcher to customer? Is it better to sell on the hoof and let the customer take it from there?

Hi. Our level 3 licence permits us to sell meat that has been packed, cryovacced, labelled and frozen by a Primesafe (Vic) licenced butcher. Mode of transport must also be approved and temperature logs kept up to date.
