Summer recipes for lamb
Hi all,
We have just killed a few of our own lambs off our hobby farm and and we have a freezer full of assorted lamb cuts. Does anyone have any recipe ideas for lamb?

Hi, try this one easy and tasty, a summer favourite at our place.
Warm Lamb Salad
200g pumpkin (dice then roast)
1 Lebanese cucumber
1 Red capsicum (remove the seeds)
4 Roma tomatoes
Lettuce leaves
100g Feta
Olive oil
400 grams of lamb fillets
Tzatziki yoghurt dip
1. Dice the pumpkin and road until tender and slightly browned.
2. Chop the cucumber, capsicum and tomatoes, mix together in a bowl with the lettuce leaves and pumpkin pieces. Crumble the feta through the salad.
3. Slice the lamb into fine slice, rub the olive oil into the lamb.
4. Lightly sear the lamb in a very hot frypan until cooked rare to medium.
5. Add the lamb to the salad and finish with a tzatziki yoghurt dip.
One of my favourites has to be lamb cuttles, mash and rosemary gravy. Pretty basic, but so yum when you have your own fresh, and much more affordable cutlets.
